Cherry tomatoes are one of my favourite foods to eat any time of the day. I love them roasted and was pleasantly surprised to red that cooking them enhances the nutritional value of these sweet, succulent, and savoury fruit.

Cooking any food at high temperatures decreases the nutrients you receive from food, but this is not the case for cherry tomatoes.

Cherry tomatoes contains Lycopene , a powerful antioxidant that plays a important role in strengthening & protecting your immunity. Lycopene increases when heated for 2 minutes or more, up to a 171% increase.
